Matumbo (tripe recipe from Kenya) |

Ingredients1/2 kg tripe, cut into small pieces 3 tomatoes, medium size 1 onion, large Garlic, grated Coriander Oil Salt |
DirectionsBoil the tripe for at least 30 minutes until tender. In the meantime in a pan fry the onions until golden brown, then add garlic and mix well. Add chopped tomatoes and continue to cook for a minute before adding the coriander, the tripe and salt to taste. Let it cook for 5 more minutes and serve with rice. |
